Very high in soluble fibre, Guar gum is more soluble than locus bean gum and is a better stabilizer, remaining stable in solutions over the pH range of 5-7. Guar gum also contains an emulsifier that helps prevent oil droplets from coalescing. With a thickening ability almost eight times greater than corn-starch, guar gum is very economical.
